Combine Coco Sugar®, baking soda, and all purpose flour in a food processor.
Once the dry ingredients are combined, add the cold butter then continue mixing them until the dough forms a crumb. Then, you can add the rhum essence.
Transfer the dough to a bowl, and add the raisin. Mix well.
Take a tablespoon of the dough, and shape into a ball, then flatten it. You may get creative in this step. However, because the dough is crumbly, be careful shaping it.
